I should be able to use the timing cover without fuel pump if I use an electric fuel pump too, correct? Shouldn't be any different I would think.

Correct. Just make sure to use a fuel pressure regulator amd a fuel pressure gauge. Adjust the pressure regulator according to the carb's recommended psi.
Some fuel pumps come with an anti roll function.
